AUNT JUANITA'S BROCCOLI AND CAULIFOWER SALAD

BROCCOLI and CAULIFLOWER SALAD

This post will be kind of like the recipe card I'm holding in my hand  
without a colorful picture to illustrate the salad when finished.

Aunt Juanita has been gone for awhile and so has Uncle Will.  
Both were great COOKS.
As long as I can remember Aunt Juanita, was a vivacious women with an extremely out going personality.  Her personality was infectious and oh how I loved this woman.

It's an honor to me to have a copy of one of her recipes.

When I was a young girl, I thought nothing about losing recipes for dishes that were presented at many a family gathering.  As I got older, I still didn't cherish the recipes.  I think I thought LIFE would never end as I knew it.  Boy, was I wrong.  I'm now in my 60s and an old woman myself. When I go to a family gathering, I'm now one of the elderly and all the faces have changed.  The day will come when we no longer gather.  I can't think about that right now as the memories I have are cherished.  For now, this salad is good for the ages.


Aunt Juanita's Broccoli and Cauliflower Salad
1/2 cup mayo
1/3 cup white vinegar
1/3 cup oil
1/3 cup sugar
1/2 tsp. salt
broccoli
cauliflower
1 bunch green onions
1 cup black olives

Blend the first 5 ingredients.
Let this sit in the refrigerator for 1 hour then pour over vegetables and marinate over night.


As I was reading about cauliflower, I had wondered if the colored cauliflower were more nutrient dense then white cauliflower.  Come to find out, colored cauliflower has more antioxidants.  I believe this salad could be modified using colored cauliflower along with the white making a delicious salad to enjoy.

Finding these green, orange and purple cauliflowers will be challenging as the stores seems to sell only the white ones.  Perhaps I should attempt to grow some next Spring.

DAUGHTER'S PIE CRUST RECIPE

Pie Crust Recipe.
With her permission I share her recipe with you.
BLESS your family, friends and your taste buds with this wonderful crust.

Pie Crust Recipe

1 cup flour
3 heaping tablespoons of shortening
A dash of salt
A tiny bit of ice cold water

Mix ingredients together well.
Roll out on wax paper.
Assemble pie.
Spread a little milk on top of crust before baking.

SELECTING THE CORRECT SIZE CHANDY TO USE IN A ROOM MADE EASY. FORMULA MEASUREMENTS: Measure the room's height and width. Add together the numbers. Example: 8' x 10' room is 8 plus 10= 18" Use a 18" wide chandy. OR Take width of room calculating 2" for every foot. Example: 15' wide room. Take 15 times 2 = 30. Room needs 30" wide chandy. Standard distance between the bottom of the chandelier to the top of the table is 30 inches. When hanging the chandelier, make sure to hang it at the proper height. The bottom of a chandelier over a dining table or kitchen island should hang 30 to 32 inches above the top of the table or island. Most rooms call for at least 7 feet of space between the bottom of the chandelier and the floor.
