SATURDAY HAPPENS WITH SOUP ON MY MIND


HOW QUICKLY A WEEK CAN FLY BY.  It's Saturday and I feel like I am somewhat rested from the extremely busy previous week we had.  Sleeping in and waking more refreshed.  Checked the calendar for the week to come and it is a much slower week for us.  PTL!

Cilantro, pumpkin plants, peppers and some tomatoes will get planted today into the new pots we bought yesterday.  My herbs are in pretty decorative pots that all look similar.  Our CONTAINER GARDEN is looking beautiful.  Functional.

Just finished a delicious bowl of oatmeal with chopped walnuts, sliced almonds, cocoa, cinnamon, pumpkin seeds, blueberries, craisins, strawberries, and almond milk.  Made for a hardy Breakfast/Lunch meal.  Call it BRUNCH.  Will eat again about 6 having a huge salad.  Sippin on water through-out the day.

This is day 19 of our Daniel Diet.  Getting close to being finished this round.  Come Tuesday, we will probably go eat Mexican Food.  The little local restaurant has a vegetable soup with chunks of chicken that I will probably get.  The broth is spicy, but I like it a lot.  Their salsa could be drank separately.  It's that good.  The chips are what I must watch out for.  I tend to eat them way too fast.  MY BAD. 


After I've had a day or two OFF from the Daniel Diet, I may try a week of only eating healthy soups, no crackers.  Creamy Tomato, Roasted Red Pepper Tomato Basil Soup, Vegetable Soup, Butternut Squash, Carrot with Cashew Ginger Soup, Spicy Black Bean Soup, Creamy Golden Cauliflower, Moroccan Sweet Potato Soup, Vegetable Lentil, ...hummmm.  A week of just soups.  Curious if doing this will break the plateau I am stuck on? 


I'll weigh myself again on Monday morning.  My weight has been stuck.

Next week, I'll need to go back to TOPEKA to purchase the boxed soup.  Daniel Diet ends Tuesday and then I'll have soup on hand for just me.  Hubby will need more calories than me.

DINING ON THE PRAIRIE: Cheesy Broccoli Cauliflower Soup

DINING ON THE PRAIRIE 
CHEESY BROCCOLI CAULIFLOWER SOUP
with Organic Croutons

The soup bowl holds close to two cups of soup, so I manage to eat this much each time these bowls are used.  ORGANIC all the way.  Cauliflower, broccoli, carrot, celery, grated cheese are the main ingredients in this.  Herbs.  Perfect anytime of the year to feast off of. Nutritionally dense and delicious.

HOME-MADE MEALS ON THE PRAIRIE...we do eat out quite a bit and when we do I am trying to eat more sensibly than before.  Watch the bread and starch.  

While we're at HOME, we have changed much about our food selection.  Still enjoying HOME-MADE MEALS made from scratch.  Highly processed foods are rarely consumed anymore as they are not healthy for human consumption.  They add to the problems of High Blood Pressure, High Cholesterol, Diabetes Type Two, Obesity, Cancers, and a array of other health issues.  I fit the bill.

I have had thyroid cancer, have high blood pressure, high cholesterol, am obese and am now diabetic.  Doesn't sound great does it?  After my dear Husband was diagnosed as having Non-Hodgkins Lymphoma back in January 2021 and I being told I was diabetic in April 2021...I said, WE HAVE GOT TO DO SOMETHING.  We did.  Began consuming organic foods, doing our best to avoid GMO foods, dodging the soys, high fructose corn syrup, natural flavors, avoiding hormones, additives, pesticides, herbicides, artificial sweeteners and fluorides.     

I have lost 50 pounds since September 2020.  I lowered my A1c and my cholesterol has improved.  Hubby is holding his own.  My over all well being has improved and I believe I will stick with this plan I am now on...organic and non-GMO. 

Eating grass fed beef, soy-free eggs, organic veggies and fruits, hormone free dairy, drink Spring water.  I take a Apple Cider Vinegar supplement, cinnamon, Co-Q 10, Vitamin C, Vitamin D3, Zinc, Beet root and I gave up coffee also regular and diet soda pops. 

My health has improved.  
Still have a ways to go on the obesity part.
Lord have mercy.

Time For Soup

SOMETHING IS JUST RIGHT ABOUT COMING HOME TO A HOT COOKED MEAL ON A LATE COLD AFTERNOON.  CROCKPOT ON and Chicken Vegetable Soup simmering.  I had made a food ministry run this afternoon to deliver some food to a family.  Earlier in the day I rummaged thru my pantry shelves grabbing some items to bag up that I knew we wouldn't miss.  I needed to thin out the 'best used by such an such date' getting close to expired items.  These items will help another family.  A head start on organizing our WINTER pantry.  One day closer to SPRING gets me through the WINTER.

Decorating, cleaning, organizing, thinking about what to do helps me get through the WINTER. 

I gathered cake mixes, boxed lasagna, bagged spaghetti, noodles, a couple small canned hams, uncooked rice, dried beans, corn bread mix, peanut butter, sugar cookie mix, oranges, prune juice, cranberry concentrate, pretzels, flour, ginger snaps, etc.  I made my run then drove over to the Cottage to do only one load of laundry.  Gathered up some Christmas boxes to bring over to Prairie Home later.  And while I was there I thinned out some other things.  A little here and a little there. 

Returning HOME driving slower than usual.  Raining and spitting snow.  Wet with slicker roads.  After a rain the oils on the roads surface making the roads slicker than normal.  Adds to the possibility of hydroplaning.  Didn't feel like flying through the air landing in a deep ditch lying sideways waiting for help.  

SO when I walked in the back door of our PRAIRIE HOME the aroma of Chicken Vegetable Soup was wonderful!  Crockpot goodness.  The weather has turned out wet with rain turning to ice pellets and now fluffy snow is falling as I sit in my HOME looking out the french doors.  HUGE fluffy flakes falling to the ground.  

Cold weather has sparked an impulse in me to do some cleaning.  The Office upstairs will get a hands on this week-end.  More shuffling for sure.  It will be helpful and satisfying to have an Office area where I can concentrate on all the paperwork needing to take place.  Sometimes I feel so geared up wanting things done and having to wait till it happens.  Vroom vroom.  So I will be a happy camper when this Office manifest itself in the Sunroom.  Tadaah.

This past week I did get some of my porcelain dolls relocated to the Living room where they are displayed in our antique secretary.  I have thinned out my dolls the last couple of years with occasionally buying a doll at the THRIFT STORE.  I've started moving the dolls around our house because I am getting more comfortable in our PRAIRIE HOME.  We have been here for a little over a year and a half.  Some of the places I lived early on were for a year and a half to two years and off we'd go to another community.  I'd get to where I would start thinking isn't it time to move after we had been in a location for two years.  Habit forming.  We had been in our ole rock house close to ten years.  The longest period of time for us during our marriage.

The need to stay put is on the back burner sort of speak.  As I continue to get better organized and thinned out, this is a lovely place to hang my hat.  

The snow continues to fall and is getting thicker as I type.  Perhaps we will receive 6 to 10 inches over night.  A very wet Winter.  Darkness is settling in as the grey skies turn to late afternoon early evening shades of pewter with night creeping in.


HOME LIFE is for me.  
I love it here.

I have to disagree.  It was good, but not that good.

DAUGHTER'S PIE CRUST RECIPE

Pie Crust Recipe.
With her permission I share her recipe with you.
BLESS your family, friends and your taste buds with this wonderful crust.

Pie Crust Recipe

1 cup flour
3 heaping tablespoons of shortening
A dash of salt
A tiny bit of ice cold water

Mix ingredients together well.
Roll out on wax paper.
Assemble pie.
Spread a little milk on top of crust before baking.

Simply delicious,

SELECTING THE CORRECT SIZE CHANDY TO USE IN A ROOM MADE EASY. FORMULA MEASUREMENTS: Measure the room's height and width. Add together the numbers. Example: 8' x 10' room is 8 plus 10= 18" Use a 18" wide chandy. OR Take width of room calculating 2" for every foot. Example: 15' wide room. Take 15 times 2 = 30. Room needs 30" wide chandy. Standard distance between the bottom of the chandelier to the top of the table is 30 inches. When hanging the chandelier, make sure to hang it at the proper height. The bottom of a chandelier over a dining table or kitchen island should hang 30 to 32 inches above the top of the table or island. Most rooms call for at least 7 feet of space between the bottom of the chandelier and the floor.
