MEXICAN CASSEROLE.
NEW DISH TO TRY. Cornbread with salsa on top and beef with corn, peppers and onions underneath. Tasted just as good the next day as LEFTOVERS.
Saute diced onion and green peppers til tender.
Add a pound and a half of lean ground beef. Brown the ground beef adding taco seasoning. Drain the beef.
Add 1 1/2 cups mild salsa in beef.
Drain a can of sweet corn and add to beef. Stir together and simmer until bubbly.
Pour mixture into 9x13 baking dish. Smooth out mixture.
Add one 8 oz. can of tomato sauce and 1/2 cup of shredded taco cheese to beef mixture. Smooth it out.
Mix up 2 boxes of Jiffy Corn Muffin Mix following directions on box. Pour over meat mixture.
Bake at 375 degrees for 30 - 40 minutes until knife comes out clean. Sprinkle more shredded cheese over cornbread and bake 10 more minutes until cheese is bubbly.
Remove from heat, let set 5 minutes, cut and serve.
Added a dollop of sour cream to my individual serving.
Festive casserole to enjoy anytime.
