I cannot help but think about my Mother-in-Law when Chocolate Sheath Cake is mentioned. Oh have mercy. There were times when we went to visit, Mary Lou would have this dessert fixed and waiting to serve us. I could have ate the whole cake.
This was part of our past as she has been gone for 5 years now. These fond memories come to mind. The older I get the memories come to mind. I have this to hang onto for the time being. A very good memory to embrace and remember.
My Mother-in-Law, Mary Lou was quite the cook. Her Chocolate Sheath Cake was hard to beat. THIS CAKE WOULD JUST ABOUT MELT IN YOUR MOUTH. I loved it! I loved her. I think about her from time to time. This is one memory I want to remember. No calories. We'd sit around their Kitchen table chatting and eating this delicious dessert. Oh so very good. If I could step back in time, I would and I would have told her face to face how awesome this dessert was with my mouth full of it. Have no shame.

SHEATH CAKE
MARY LOU'S CHOCOLATE SHEATH CAKE
2 CUPS SUGAR
2 CUPS OF FLOUR
MIX IN LARGE MIXING BOWL.
PUT ½ CUP CRISCO
1 STICK OLEO
4 TABLESPOONS COCOA
1 CUP WATER IN PAN AND BRING TO A RAPID BOIL.
POUR OVER SUGAR AND FLOUR AND MIX WELL.
ADD 1 TSP. VANILLA
½ CUP BUTTERMILK
1 TSP. CINNAMON
1 TSP. SODA
2 EGGS SLIGHTLY BEATEN
MIX WELL.
BAKE IN 350 DEGREE OVEN 40 TO 45 MINUTES.
MAY BE BAKED IN 9 X 13 CAKE PAN OR A SHEATH PAN.
GREASE AND FLOUR PAN.
ICING
START ICING ABOUT 5 MINUTES BEFORE CAKE IS DONE.
ICE WHILE HOT.
4 TABLESPOONS COCOA
6 TABLESPOONS MILK
1 STICK OLEO
1 BOX POWDERED SUGAR
1 CUP PECANS
1 TEASPOON VANILLA
BRING COCOA, MILK AND OLEO TO BOIL,
REMOVE FROM HEAT.
ADD REMAINING INGREDIENTS AND MIX WELL.
SPREAD ON CAKE.
