Out of our MAKE-SHIFT KITCHEN (while we wait for the remodeling to be completed)
we prepared a Mother's Day Meal for our company. God was good to us and the meal turned out well.
Life Just Got a Little Easier Mother's Day Lunch MENU
Ham (slow cooked overnite in crockpot without lid and covered with aluminum foil)
Cauliflower and Broccoli Salad (cold food prepared in bowl)
Spinach Salad with Mandarin Oranges (cold food prepared in bowl)
Cole Slaw (cold food prepared in bowl)
Apple Salad (cold food prepared in bowl)
Green Beans with Bacon Bits (microwave)
Corn (microwave)
Sweet Potatoes (small counter top oven)
Olives
Bread and Butter
Angel Food Cake with Strawberries
Coffee (coffee maker)
Iced Water
GLAZED HAM
At present we don't have a full size oven. It's Crockpot meals for us plus foods fixed in the microwave, skillet, small counter top oven.
HAM from freezer was brought into the house the night before and placed in crockpot. Since the Ham was way too big to fit in crockpot with the lid on, we lucked out and covered it with sheets of aluminum foil.
Add water in crockpot.
Slow cook Ham through the night and then around 7 in the morning turn up the temp to high.
Cook until noon.
Glaze Ham right in crockpot.
Place on silver plated platter.
Slice and serve.
Tender and sweet.
SPINACH SALAD
Organic Spinach pre-washed and ready to serve.
Spinach leaves
Mandarin Oranges
Slices of Red Onion
Handful of Raisins
Toss ingredients in bowl and serve.
Salad Dressing of choice.
SWEET POTATOES with Pecans
Canned Sweet Potatoes
Sweet Potatoes
Brown Sugar
Pecans
Cover bottom of baking dish with brown sugar.
Place sweet potatoes in dish.
Pour juice from can over potatoes.
Sprinkle pecans on top of potatoes.
Bake until hot and serve.
Cauliflower and Broccoli Salad
Use chilled and washed vegetables.
Chop veggies and add two handfuls of raisins.
Cover veggies with Green Goddess Salad Dressing and sprinkle with small amount of sugar.
Toss and serve.
The meal was well received and left overs placed in the fridge. Life just got a little easier and we had a sweet day.
Though our kitchen is torn up...we had fun preparing this meal served with love.

Though we were preparing food in a cramped and small room where a kitchen will be rebuilt...we ate off of clean plates, used clean silverware and drank out of clean glasses.
Though the kitchen isn't completed...we laughed and smiled.
Though the skies outside were overcast...we had sunshine in our home because we are a family and we prayed...there is love where the Lord is.
The house doesn't have to be perfect or upscale...but it does need to be a home.
