'Life Just Got A Little Easier' Prairie Cheesecake


Dining On the Prairie 
~Cheesecake~


LIFE needs to be easier at times.  
Too much to do.  
Easy CHEESECAKE to whip into shape and call good.


Prairie Life is delicious 
especially when you have dessert,

Ingredients

2 pkg. (8 oz. each) Cream Cheese
1/2 cup sugar
1 Tbsp. lemon juice
1/2 tsp. vanilla
2 eggs
1 graham cracker pie crust


Instructions

ALLOW cream cheese to soften to room temperature.
HEAT oven to 350 degrees.
BEAT cream cheese, sugar, juice, and vanilla with electric mixer 
on medium speed until well blended.
ADD eggs; mix until blended.
POUR into graham cracker pie crust.
BAKE 40 minutes or until center is almost set.
COOL.
REFRIGERATE at least 4 hours before serving.
GARNISH.
STORE leftover cheesecake in refrigerator.


CAN SOMEONE SAY CHEESE?
Puts a smile on my face.
Satisfied.

Gather Ingredients

Use room temp cream cheese.

Mix ingredients well together.

Pour into graham cracker pie crust.

Ready to bake at 350 degrees for 30 minutes.

Refrigerate for three hours before serving.

Great with a topping.

Heaping Tablespoon



I didn't have my camera with me and I'm old fashioned with no camera in my phone.  My Trac Phone is what it is.  It helps keep my phone bill down.  No camera.  I'm one of those creatures that still carries a camera when I want a pic or snags it off the internet.

Anywhoo.....daughter and I had coffee at a Shoppe in Saint Marys, Kansas.  My Banana Fosters LATTE was gorgeous and tasted just like a dessert.  So I called it my DESSERT!

What a treat.  Nice conversation with my daughter drinking a LATTE.

We took a peek inside FLORENCE ADAMS.  There's a sofa in there where I caught my breath as I sat.  That's terrible, but there are some days that walking across the street causes me to get winded.  Not every day...just some.

What To Do...what to do





If you have been surprised at how you respond to really bad news that takes a while to soak in...and then it pulls you down or sinks your boat sort of speak...what are you to do when you don't just spring right back?

In simple terms....I say, pray and find something productive to do that makes one happy.  Count your blessings and stay steady.  

There seems to be seasons in life that aren't easy.  I started blogging 5 years ago when I came out of semi-retirement to babysit a granddaughter while my daughter went through an unwanted divorce and was getting back on her feet.  Cancer struck me.  Dog died.  House redecorating waffled.  Financial challenges increased.  Son going through a divorce...dissolution of marriage.  Husband bit by bat.  Rabies shots to the head.  Two more dogs die.  Hubby hit with cancer......bummer.  

Though this has been tough times...I have to do something that gives me some joy.

I'm back at it.  I want to enjoy life, liberty and the pursuit of happiness right here in small town america.  I seldom rant about political or religious challenges on my personal blog.  It's rare and probably won't happen, but the writings that I do, the pictures I post, etc.  are part of the process of doing something that brings me some enjoyment in life.

How many of you have been known to go through seasons in life that weren't so wonderful and the process of going through these seasons drained you?  Or what you learned about human nature was a bit more than you could take?  What did you do?

Building character is sometimes a rough road to walk.  The things we learn along the way can make us or break us.  

All in all...I know that God knows all.  You can't fool HIM.  He knows everything anyways....you might as well talk to Him about your troubles so He can help you through them, put some happiness back on your face and in your soul. 

It's a beautiful day today and I want to go for a walk.

Prairie Biscuits



'Life Just Got A Little Easier'
Prairie Biscuits

Dining On The Prairie served up hot food with Prairie Biscuits to enjoy.  
Hubby did the BAKING on this one.  The biscuits turned out nice 'n fluffy.
Wonderful with REAL BUTTER.


~PRAIRIE BISCUITS~

Ingredients

4 cups of self-rising flour
1 cup of shortening
pinch of salt
1 and a half cups of milk
1 and a half cups of buttermilk


Directions

Preheat oven to 450 degrees.
Grease cooking sheet.
In large metal bowl, add 4 cups of self-rising flour,
shortening, pinch of salt, milk and buttermilk.
Stir until well blended.
Drop biscuit mixture by spoonful onto cookie sheet.
Bake for 15minutes.


Add ingredients to bowl and mix well.

Drop biscuit mixture by spoonful onto greased cookie sheet.  
Bake for 15 minutes in 450 degree oven.


PRAIRIE BISCUITS are delicious 
with gravy, bacon and eggs.

The week-end is just about here.  I'm ready.  Last Holiday week-end was refreshing and it seemed like I had been gone a couple of weeks instead of a couple of days.  This is the kind of time away from HOME needed, but today it seems to have hit me that I need rest.  

We went to Kansas City on Saturday, visited the Mall, ate Pork Chops at Stroud's, watched a late night movie about Dr. Ben Carson, slept in, visited Union Station and had lunch at Harvey's in the Station.  Drove HOME.  Hubby had some medical appointments on Monday in Topeka.  





We bought a $75 micro-wave at the RESTORE store and a HELMERS piece of furniture for $40.  When I saw the micro-wave, I thought it was beautiful and needed to come HOME with us...the HELMERS piece painted pink was a must have.

There's some work that needs to be done in the Kitchen before the micro-wave is installed.  Hoping that our Kitchen is completed by Summer...we are inching a long. 

When the spare room turns into my antique OAK room, the pink chest will more then likely become a night stand.  May leave it pink...maybe not.

Geese in Topeka were plenty.  They were so calm it was scary.  Beautiful to see.  




Thursday was Cheesecake day.....was so proud of myself and baked a cheesecake.  It's been years since I did this.  What's got into me?  Cheesecake.





Today as I drove Lil Miss to school, Time/Temp Sign said it was the big zero.  0 degrees.  Lil Miss's class went to the Topeka Children Discovery Center and I tagged along.  The kids were wonderful and the time went fast, but when I returned HOME I needed a nap.  So down I went.  

Hubby brought Supper HOME.  Sooooo glad.  This 'ole Lady is tired.  Supper was Fried Chicken, Baked Beans and Potato Salad.  Sounds like a PICNIC with someone else fixin' the fixins.  Must be craving milder weather.  

Yesterday as I was looking in the flower bed, green crocus was popping through the soil.  Seems early.  Perhaps this bitter cold WINTER will disappear and SPRING will blow in early.  That'd be alright.  

In the mean time, the WINTER SNOWS have a beauty all their own.

DAUGHTER'S PIE CRUST RECIPE

Pie Crust Recipe.
With her permission I share her recipe with you.
BLESS your family, friends and your taste buds with this wonderful crust.

Pie Crust Recipe

1 cup flour
3 heaping tablespoons of shortening
A dash of salt
A tiny bit of ice cold water

Mix ingredients together well.
Roll out on wax paper.
Assemble pie.
Spread a little milk on top of crust before baking.

Simply delicious,

SELECTING THE CORRECT SIZE CHANDY TO USE IN A ROOM MADE EASY. FORMULA MEASUREMENTS: Measure the room's height and width. Add together the numbers. Example: 8' x 10' room is 8 plus 10= 18" Use a 18" wide chandy. OR Take width of room calculating 2" for every foot. Example: 15' wide room. Take 15 times 2 = 30. Room needs 30" wide chandy. Standard distance between the bottom of the chandelier to the top of the table is 30 inches. When hanging the chandelier, make sure to hang it at the proper height. The bottom of a chandelier over a dining table or kitchen island should hang 30 to 32 inches above the top of the table or island. Most rooms call for at least 7 feet of space between the bottom of the chandelier and the floor.
