Time For Chicken


~Time For Chicken~


Ingredients
8 chicken breast halves
ice water
salt
2 cups buttermilk
2 to 3 cups self rising flour
vegetable oil

Instructions
Remove skin from chicken breast.
Place chicken in large container with a cover.
Use 2 tsp salt per quart of water.  
Pour salted ice water over chicken.
Cover and refrigerate overnight.
2 hours before cooking, drain chicken.  
Pat dry.
Place in large bowl.
Pour butter milk over chicken and refrigerate until time to fry.
Drain chicken.
Dredge the breast in flour.  
Packing flour into crevices and coating well.

Deep-fry in hot oil (350 degrees F) for ten minutes, 
or until cooked.
Drain in a single layer in a large shallow baking pan.
Yield 8 servings.

I am Fried Chicken Challenged

Lil Miss was still ill and would be taken to the Doctor's again.  My plans for the day were changed and I needed to be flexible.  Schedule adjustment.  I stayed in my pink worn but cozy housecoat until the phone rang with the time for Doctor's Appointment.

Driving across the Flint Hills was a beautiful sight.  The gentle rolling hills are very green since the pioneers burned the pastures to encourage greening.  It works.  No feeding buffalo by the side of the road.  Instead, the grazing cattle peppered the fields by Grandma Hoerner's.  

When my Sister comes for a Summer stay, I want to take her to Grandma's place.  This will be an excuse to purchase some thick sliced apple sauce and some other food items for future use in our HOME.

Temperatures only in the 60s which dictates wearing a sweater if you desire to stay comfortable in the early morning hours of Kansas.

Met up with Lil Miss's Momma and traveled onward to the Doctor's Office.  Decided to wait in the car as Lil Miss was being seen by her Doctor.  Still ill.  I copied a few recipes from an old Library book needing returned.

One more Meatloaf Recipe I will try and Fried Chicken that will have to be eaten.

I am determined to fry up some chicken that I pride myself in.  I'm Fried Chicken Challenged.  Sigh.  How can this be?  My Baked Chicken turns out, but not my FRIED Chicken.  This is a feat to be embarrassed about.  Halp!

I wasn't there long as Lil Miss skipped beside her Mom to let me know she is still sick with sinusitis.  Her cough is hanging on.  We rode over to the Pharmacy.  Quickly…I tore open an old health insurance envelope so I had more writing space to jot down recipes.  The envelope was stashed in my traveling basket that sits on the passenger side of the front seat of the car.  Daughter took Lil Miss inside the HY-Vee where her Pharmacy dwells.

Just in time.  When the girls came out of the Pharmacy, we rushed over to have a McDonald's Salad for Lunch.  Hubby met us at the newest Mickey D's.  Lil Miss was saddened but her tears dried up as she returned to play on the recreational toys.  Hubby and Daughter leave for work while I stay behind with Lil Miss to finish a hamburger.  Sippin' on some dollar coffee with three creams in my traveling cup, we drive a residential area looking at the Spring Flowers that beautify this College Town.

The ones getting an education sometimes walk out in front of a moving car.  Ignoring the crosswalk with flashing lights, I shake my head.  Duh.


Target bound to look in the dollar bins I buy melamine dishes that look like PAPER PLATES.  Had to get these.  Had to.  WHY?  Because.  Look at these cuties.  After I wash them, they will rest inside my Picnic Basket ready for outside dining and family reunions.

Time for a break.  Drove to Aggieville.  Playing the piano at the Varsity Shoppe, I tried one of their specialty do-nuts.  Way too sweet.  Stopped off at the Dusty Bookshelf.  Sat a spell.  Left to view the University Gardens Irises.  Will have to return with a list of desired Irises to purchase this Summer.  Afternoon is over.  Met up with family at Menards.  Traffic was heavy so we detoured onto the backroads of Military Road which leads to Wamego, Kansas where I dropped off some Library books.

Home Haven Happy Meal and Fried Chicken


Gave up on fried chicken. 
Mine just NEVER turned out. 
Would put it off for years....just wouldn't fix it. 

My Baked Chicken was alright, but FRIED.....was awful.


Braving it for FATHER's Day   I PROMISED   to fix some. 
There's no Kentucky Fried Chicken here to where I could purchase some
 and PRETEND it was MINE. 
The shame of it all. 

All the "Why did the chicken cross the road?" JOKES 
and this PAPER FUNNY wouldn't work.


So with that in mind, I purchased some Chicken Breast and Chicken Legs.  Did some reading.  Read some more articles about Fried Chicken.  Looked over some Cook Books, Prayed and than gave it a whirl.  Herbs from Daughter's Garden spiced up the flour coating.

TIP:  One Cook Book said you might want to place newspaper down under the skillet to catch the grease for easy clean-up.

In skillet, heat shortening at 350 degrees.
Have enough melted shortening that's about 1/2 inch deep in skillet.
Dip and cover chicken parts in seasoned flour then place in skillet and fry in hot shortening.
Try to not let chicken parts touch while in skillet.
Place lid on skillet and fry for 15 minutes on one side then flip chicken over and fry for 15 minutes on the other side.
Lower temp to 300 degrees and take lid off of skillet.
Continue to fry for 20 minutes then flip chicken over for additional 20 minutes.
Finish by placing lid back on and frying 10 minutes more. 
This is to help make the chicken crispy.
Take Chicken out of skillet and place on platter.
Serve.

Thank You LORD....my Fried Chicken
turned out for the first time in almost 38 years of wedded bliss. 
Can you say HAPPY........YES!

was Fried Chicken with some Baked Beans and Potato Salad.
Iced Tea to drink.


Daughter fixed the Homemade Potato Salad.



The CHICKEN was finger lickin' good...like they say in the South.
All were satisfied.

DAUGHTER'S PIE CRUST RECIPE

Pie Crust Recipe.
With her permission I share her recipe with you.
BLESS your family, friends and your taste buds with this wonderful crust.

Pie Crust Recipe

1 cup flour
3 heaping tablespoons of shortening
A dash of salt
A tiny bit of ice cold water

Mix ingredients together well.
Roll out on wax paper.
Assemble pie.
Spread a little milk on top of crust before baking.

Simply delicious,

SELECTING THE CORRECT SIZE CHANDY TO USE IN A ROOM MADE EASY. FORMULA MEASUREMENTS: Measure the room's height and width. Add together the numbers. Example: 8' x 10' room is 8 plus 10= 18" Use a 18" wide chandy. OR Take width of room calculating 2" for every foot. Example: 15' wide room. Take 15 times 2 = 30. Room needs 30" wide chandy. Standard distance between the bottom of the chandelier to the top of the table is 30 inches. When hanging the chandelier, make sure to hang it at the proper height. The bottom of a chandelier over a dining table or kitchen island should hang 30 to 32 inches above the top of the table or island. Most rooms call for at least 7 feet of space between the bottom of the chandelier and the floor.
