MADE THE MISTAKE OF CALLING RICED CAULIFLOWER, cauliflower rice, I couldn't find it in the stores inventory via internet. I had my ah-hah moment last night when I went down the grocery aisle in the frozen vegetable section at Walmart.
There she be staring me the face in small packages. Organic even and cheaper than the other non-organic brand. RICED CAULIFLOWER! Yummers.
I wanted to use the cauliflower instead of rice for stuffed peppers. A cup of cooked cauliflower is about 25 calories as rice is about 200 calories per cup. That a huge difference. HUGE. After the riced cauliflower is cooked, it has a very pleasant flavor. The 175 calorie difference will be used elsewhere in my daily inventory of calories.

I'm doing my best to not fall off the DANIEL FAST diet wagon where I am not suppose to have grains. Cauliflower would be legal! Hubby offered to fix the stuffed peppers. I was fine with this. He made delicious stuffed peppers with the riced cauliflower and we both agreed that it was good. Not much difference in the taste, and so much better for us about calories, carbs and probably nutrition.
This is day 4 on the Daniel Fast Diet. Day 4. Last night when we made a trip to Manhattan, I was tempted to get my favorite Iced Green Tea, but stayed firm and said NO. I'm not suppose to have caffeine on this diet. I wanted a tea really bad. REALLY BAD, but did without and lived. I have to have ATTITUDE to talk myself out of something. I am weak at times, but my attitude muscle has got to be flexed.
Been fortunate not having headaches from the withdrawal of caffeine, but have been horribly tired. Believing the fatigue this go round is caffeine related, I shall see how my energy level is today on day 4. Staying strong on following this diet for weight loss. SO far, 3 pounds has left the building.
May just be water. Which helps with the edema in my feet. It's amazing that the edema has left my feet and I haven't been on OLMESARTAN/HCTZ for about 6 weeks. 6 weeks and the swelling in my feet is gone. ๐ฃ Praise the Lord! The back pain I was experiencing has improved as well. hum. A side effect of Olmesartan is back pain.
When my doc and I were trying different blood pressure meds, I let him know that I had already tried Benicar which caused my feet and ankles to swell. After 3 different meds were tried which all caused my feet to swell, doc put me on Olmesartan with HCTZ. My feet started to swell. I shouldn't have been fooled but I was. Olmesartan is Benicar. Back to the drawing board.
I didn't want to stay on HCTZ because there's a link between it and skin cancer. Also weight gain, higher cholesterol, higher glucose and higher blood pressure. Hum. It doesn't take a rocket scientist to figure this one out just read up on it. Thankful I can still read, think and reason.
Thinking I should get off of the HCTZ awhile back (like over a year ago), I stayed on it anyways. My philosophy has changed concerning that docs know best. We have to work together on this health journey. At one point, my doc told me that my body was my body. So I appreciate this.
Holding my own with lowering the blood pressure. I am in a manageable range. It flexes throughout the day and so does cholesterol. Imagine that.
WALKING JOURNEY. I was so tired yesterday that I did not want to do anything. Determined to get going, I forced myself to go walking. It's a mile to the Dollar Store, so I headed out and went that direction. Hubby was to meet me there. He stopped to check up on me when I had 3/4th of a mile under my belt. I broke and got in the car knowing I had not made my mile, but then we went shopping and I walked the parking lots and throughout the stores. I made my mile of walking for the day. PTL.
Walmarts was mayhem. People were stocking up on groceries before the winter storm hits hard on Saturday. We're pretty well stocked up and can get through the bad weather this week-end.
TODAY, the WINTER STORM is headed our way. The temps are in the low 20s with the skies being an unusual color. Ice is predicted along with snow. A lot of snow by Sunday evening. I rescheduled my Monday medical appointment as the roads between here and there will more than likely be icy with snow. When the temps are in the teens, I no longer like getting out in it as our cars are elderly as well and being more cautious these days, I try to look out for our safety especially in the bitter cold.
I'll do my best to venture out to the SHE SHED and take a stroll on the tread mill. Grands been running on it so it should be warmed up. I will turn the radio on and listen to music while I walk in place or tune in to a talk show where my mind will wonder as I walk. At any rate, this will be DAY 4 of walking and faithfully staying on the Daniel Diet. Day 4. AND I'M on me way.
BREAKFAST was hot lemon water. I actually wasn't hungry.
Lunch would be served about 11:30 with left-overs of stuffed peppers filled with about 1/2 cup of riced cauliflower, tomatoes, onions. Not sure about Supper yet, but hot tomato soup sounds like a winner as bitter cold weather is here with snow/ice its way. Pineapple juice for snack and maybe some peanut butter.

I believe I will start sketching some snowmen and have fun with it. I sent my Sister a small box of snowmen before Christmas. I thought this one was adorable with halo.
ON THE HOME FRONT: There always laundry to do. Thankful to have a utility room in this COTTAGE where I can do the laundry on the same floor as we live. I know my attitude isn't the best about laundry. I should improve.
Gotta get my hair shampooed. Gotta.
