DINING ON THE PRAIRIE AT THE CLOVER CLIFF RANCH BED & BREAKFAST

DINING ON THE PRAIRIE was extra special for me since we were at the CLOVER CLIFF RANCH BED & BREAKFAST for two days and two nights celebrating my 70th Birthday.

Arriving on Wednesday afternoon, there was a Fruit and Cheese Platter chilling in the fridge for us to snack on for Supper.  Hubby requested it in advanced.



THURSDAY MORNING'S Breakfast was served in the Mansion's Veranda where we sat at a small table beside a large picture window allowing us to look out at the open prairie.  Spectacular view.  We dined on Quiche, Cherry Pastry and Apple Crisp topped with Granola.  Hot Tea, Orange Juice and water to drink.  Not only was the food delicious, but the presentation was lovely.









No make-up so no close-up of a 70 year old me that needs 8 hours sleep, but didn't get it.  I figure I would just be a tired old lady eating well on the prairie.

Friday morning in the Veranda, for Breakfast we were served a hot Mexican Enchilada in a skillet, Apple Puff and Fruit Compote in vintage Peanut Butter Glass.  Beverages were Hot Tea, Orange Juice and Water.  Everything was as good as it looked.  Everything and the presentation was beautiful.  Service with a smile.

DINING ON THE PRAIRIE


OUR LITTLE PATIO GARDEN HAS PRODUCED BEAUTIFUL BELL PEPPERS
and Grape Tomatoes.  I believe that in the future we will continue to be PATIO GARDENERS with growing Bell Peppers, tiny Grape Tomatoes, miniature Cucumbers, long String Beans, Baby Potatoes, Lettuce, maybe Corn, Onions, multiple colored Carrots, Heirloom Radishes.  Shall see how it goes.  The Bell Peppers and Tomatoes are going into huge Salads that we eat at HOME.

DINING ON THE PRAIRIE

DINING ON THE PRAIRIE.

I do have a love affair with Ketch-up and BBQ Sauce as you will see.  It's a weakness.  
Is there such a thing as a Ketch-up ADDICT?  
Yes.  Tis me.


SIMPLE MEALS FOR PRAIRIE DWELLERS LIKE US.
Grass-fed Beef Patties topped with BBQ Sauce, steamed Broccoli 
and Garlic Mashed Potatoes.

I like having at least three foods per meal.
Protein from the beef, veggies from the broccoli and potatoes.


Salmon Patties topped with ketch-up, Mac 'n cheese and spinach drizzled with vinegar.
Veggies from spinach sprinkled with vinegar.  Protein from salmon which is made with crackers (grains) and egg (protein).  Protein and starch from the Mac 'n cheese (protein).  Ketch-up is a by-product of tomatoes which is actually a fruit.



Prairie Goulash topped with... you guessed it, organic Ketch-up
with a side of Green beans.
Ground grass-fed Beef provides protein and fat.  Ketch-up is made from tomatoes which is a fruit with green beans making way for vegetables.


HOT Toasted Tuna Sandwiches.
2 chopped boiled eggs (protein), drained tuna (protein), pickle relish (veggie), mayo (fat), a pinch of sugar, a drop of lemon juice (fruit), salt and pepper mixed together then spread between two pieces of bread (grain) then grilled.




Another Prairie Goulash (protein and grain) 
topped with ketch-up (fruit).


Breakfast Oatmeal (grain) with slivers of almond (protein) and plump blueberries (fruit), half 'n half (dairy), chocolate and cinnamon.


Spicy Chili with shredded cheese and garlic round toast.


Scrambled Farm Eggs (protein) with Spinach (vegetables).


Cream of Tomato Soup (fruit), grilled cheese sandwiches (dairy protein, fat and grain) 
and saltine crackers (grain and fat).


Chicken Pot Pies.


Soup with shredded Mexican Cheese.




Homemade Cheesy Potato Soup.


Each day we have various foods from the different food groups.  This go round there was no big green leafy foods.  My bad, but then this isn't all we ate.

Tonight we will have a big, green leafy salad and that will add nutrition and value.  yum.

DINING ON THE PRAIRIE is where I want to be.

DINING ON THE PRAIRIE


DINING ON THE PRAIRIE has been a blessed event for me as I have never gone hungry ever.  These days, I eat more salads and vegetables than I have ever eaten in all of my 67 years of living on planet Earth.  I'm healthier for it.

The foods that were consumed two years ago were different than present day.  We've added more organic fruit and vegetables, soy-free eggs, more oatmeal, grass fed beef, bison, chicken, turkey, butter and a small amount of pork.  Bread is denser and seldom ate.  Hardly any rice or pasta is eaten.  Sweets occasionally.  Very little milk.  Unsweetened Iced Green Tea and Spring water. Some nuts, seeds, legumes.  Not so much corn or potatoes.  Hubby loves his coffee with creamer. I haven't drank coffee in two and a half years.  

I'm sure there will be additional changes as we morph along.

~BREAKFAST and BRUNCHES~
Hot and cold meals.

FRUIT PLATE of organic cherries, green grapes, red grapes, and blueberries.

Organic Steel cut oatmeal with mixed in cocoa and maple syrup 
topped with blueberries, pumpkin seeds and nuts.

Organic oatmeal with bananas, raspberries and blueberries.


Scrambled soy-free eggs with potatoes, green peppers, red peppers onions 
topped with organic ketch-up.

I am a FAN of ketch-up and bar-b-que sauce as you will soon see.  I think I could live off of it alone.  When I get a craving, I probably should just eat a TBSP. of it and I think it would quiet down the carving.  Less calories that way.

Oatmeal with maple syrup, blackberries, blueberries, cranberries and a few nuts.

Organic oatmeal with bananas and blueberries sprinkled with cinnamon.

Oatmeal with strawberries, sprinkled with tiny nuts and dried blueberries.


Chocolate oatmeal with fresh strawberries, nuts and dried cranberries sprinkled with cinnamon.

Oatmeal sprinkled with cinnamon, pecans, dried cranberries and some nuts.

Hard boiled eggs with salt and pepper.  Turkey bacon to the side.


Scrambled soy-free eggs with ketch-up, green grapes and Killer Dave's toast with real butter and honey.

Scrambled soy-free eggs with peppers and onions.

Organic guacamole on top of Killer Dave's toast.

Cherries, blueberries, toast and fried eggs.


Oranges, raspberries, blackberries, and blueberries for FRUIT SALAD.





LUNCHES and SUPPERS
Hot and cold meals.

Salads and regular meals.

Salad KIT.  Greens with pumpkin seeds, some dried cranberries and slaw.

Chicken with Amish noodles.


Spinach leaves, green olives, and cherry tomatoes.


Grass-fed hamburger patties with brussel sprouts.


Spinach greens, radishes, croutons, boiled eggs with salad dressing of choice.


Chicken sandwich with Killer Dave bread, Doritos and small cucumber with onion salad.

Guacamole with croutons for crunch.


Salad with croutons, cucumbers, peppers, radishes, celery, tomatoes, avocado slices 
and balsamic salad dressing.


Baked zucchini and yellow squash.  There's that bbq sauce.


 Baked chicken with Italian dressing, broccoli and mashed potatoes.


Strawberries, avocado, walnut, spinach and salad greens. 


Baked beets and carrots.



Three Bean Salad on bed of lettuce topped with dressing of choice.



Baked zucchini, squash, onion, peppers with a side of hamburger patty.

Three Bean Salad on bed of greens.


Vegetable soup.


String green beans with ?  I do see some corn.


Cabbage with potatoes and carrots.


Taco Potato with side of spring greens and cherry tomatoes.


Salmon Patties, string beans and fried potatoes.


Avocado slices with miniature cheese crackers and balsamic dressing.


Smothered potatoes, cabbage and onions with big sauce.


Butter beans with carrots and celery and a dab of bbq sauce.


Taco potatoes with salsa and onion.


Tacos.


Purple shell tacos and salad greens.


Yogurt topped with blueberries, dried cranberries, nuts and seeds.


Smothered potatoes, cabbage and carrots.


Peppers and onions.


Hot Chocolate.


Popcorn.


Spring greens, avocado, strawberries and walnuts.

Taco potato made of ground turkey, side salad and cherry tomatoes.


Baked carrots, potatoes, broccoli and cauliflower.


Salmon with lemon slices, carrots, and mashed potatoes.

Spicy chili with saltine crackers.


Baked chicken, dumplings and green beans.


Beef with noodles and green beans.


Burritos.


Baked beets, carrots, onions and potatoes.


Chicken tenders, potatoes and green beans.


Salad.


Beef Patty with smothered potatoes, cabbage and carrots.


Beef patty with green beans, vegetables.


Steak, baked potato, broccoli and garlic bread.


Garlic toast with spaghetti and meat sauce.


Pork, mashed potatoes, corn with red peppers, and green beans.


Vegetable soup and crackers.


Salad greens, chick peas, cucumbers, cherry tomatoes.



Celery with runny peanut butter.


Baked zucchini, squash, onion and potatoes.


Three Bean Salad

Veggies, pears and strawberries.

Green beans and potatoes.


Salad.


Baked potatoes with vegetables.


Vegetable soup with crackers.


Salsbury steak with dinner rolls and green beans.


Three bean salad with croutons and spaghetti.

Bison roast and vegetables.

DAUGHTER'S PIE CRUST RECIPE

Pie Crust Recipe.
With her permission I share her recipe with you.
BLESS your family, friends and your taste buds with this wonderful crust.

Pie Crust Recipe

1 cup flour
3 heaping tablespoons of shortening
A dash of salt
A tiny bit of ice cold water

Mix ingredients together well.
Roll out on wax paper.
Assemble pie.
Spread a little milk on top of crust before baking.

SELECTING THE CORRECT SIZE CHANDY TO USE IN A ROOM MADE EASY. FORMULA MEASUREMENTS: Measure the room's height and width. Add together the numbers. Example: 8' x 10' room is 8 plus 10= 18" Use a 18" wide chandy. OR Take width of room calculating 2" for every foot. Example: 15' wide room. Take 15 times 2 = 30. Room needs 30" wide chandy. Standard distance between the bottom of the chandelier to the top of the table is 30 inches. When hanging the chandelier, make sure to hang it at the proper height. The bottom of a chandelier over a dining table or kitchen island should hang 30 to 32 inches above the top of the table or island. Most rooms call for at least 7 feet of space between the bottom of the chandelier and the floor.
